BROCCOLI TREE MUFFIN

Ingredients

  • ok4 small broccoli florets
  • ok2 tbs (28 g) butter, melted
  • ok1 tbs (15 g) white sugar
  • ok1 small eggs, slightly beaten
  • ok1/3 cup (75 ml) butter milk, Leban
  • ok1/4 tsp (1 g) baking soda
  • ok1/3 cup (55 g) corn meal
  • ok1/3 cup (45 g) all-purpose Flour
  • ok1/4 tsp salt

Let's Cook

  1. 1Preheat oven to 375 degrees F (175 degrees C). 
  2. 2Blanch broccoli pieces in boiling water and set aside to cool.
  3. 3Mix butter, sugar together and stir in egg with buttermilk and beat until well blended.
  4. 4Combine dried ingredients and stir into the egg and milk mixture. 
  5. 5Pour batter into dusted muffin tins.
  6. 6Insert broccoli pieces into the batter until covered and not showing.
  7. 7Bake in the preheated oven for 30 to 35 minutes, or until it’s golden on top.
