COLORFUL CHICKEN QUINOA BOWL

Ingredients

  • ok2 small (300g) chicken breasts, cut into small strips 
  • ok½ lemon
  • ok¼ tsp pepper
  • ok2 tbsp. Olive oil
  • ok2 tbsp. balsamic vinegar
  • ok1 tbsp. Olive oil 
  • ok1 cup Water
  • ok1 cup Quinoa, washed
  • ok2 medium (200g) colored bell peppers 
  • ok1 tsp lemon juice
  • okA dash of yum and a pinch of delicious!

Let's Cook

  1. 1Season chicken breast strips with the lemon, pepper, olive oil & balsamic vinegar. 
  2. 2Marinate in the fridge for 10 minutes. 
  3. 3Place a saucepan on medium heat, and add the chicken (without any oil in the saucepan).Stir for 2 minutes then cover and let it cook through, checking every once in a while. Once the water evaporates the chicken is fully cooked.
  4. 4Add 1 cup water to a medium saucepan and bring to boil. 
  5. 5Add washed Quinoa and cook over medium heat for 15 minutes until water is absorbed and the grains are tender, add remaining 1 tbsp. of olive oil and fluff with a fork then set aside to cool slightly.
  6. 6Chop bell peppers into small squares and add to quinoa, season with lemon juice.
  7. 7Transfer to a serving dish with the cooked chicken and serve. 
  8. 8Enjoy the meal!
