OMELETS VEGGIE MUFFINS

Who said muffins should be sweet? Here is a great way to get your kids to have their eggy breakfast with MORE veggies!

Ingredients

  • okMushrooms
  • okBell pepper
  • okOnions
  • okWater
  • okSalt and black pepper

Let's Cook

  1. 1Preheat an oven to 175°C.
  2. 2Grease 6 muffin cups or line with paper liners.
  3. 3Beat eggs together in a large bowl.
  4. 4Mix an assortment of mushroom, bell pepper, onion, salt and black pepper.
  5. 5Beat milk powder and water, add to the mixture and mix everything thoroughly.
  6. 6Pour the mixture into the muffin cups and garnish with cheese (if you like).
  7. 7Bake the cups in the preheated oven until muffins are set in the middle. This should take approximately 18 to 20 minutes
