SALMON, ORZO AND BABY SPINACH SALAD YUMMINESS

Ingredients

  • ok1 cup of dried orzo
  • ok2 tbsp Olive oil
  • ok½ tsp Salt 
  • ok¼ tsp black pepper
  • ok2 (300g) Salmon filets

Let's Cook

  1. 1Place the baby spinach in a saucepan with about 1/2 cup of water.
  2. 2Cover and gently heat over a medium-high heat.
  3. 3Poach spinach for about 2 minutes or until it just wilts.
  4. 4Remove from heat and drain.
  5. 5Set aside.

To make the orzo:

  1. 1 Add 3 cups of hot water in a pot and season with salt (no oil).
  2. 2 Then add 1 cup of dried orzo.
  3. 3Leave to cook until soft, drain and serve.

To make the salmon:

  1. 1Season salmon fillets with 2 tbsp olive oil, salt and pepper.
  2. 2In a saucepan on medium heat, add the seasoned salmon fillet with the side with the skin facing downwards (do not flip).
  3. 3Leave it on medium heat for 2 minutes, then bring the heat down to low, cover the pan, and let the salmon cook for 7-10 minutes max. 
  4. 4Mix the ingredients in large mixing bowl. Stir well to combine. 
  5. 5Lunch never looked so yummy!
